Ingredients:
1 cup all-purpose flour
2 tbsp white sugar
2 tsp baking powder
1/4 tsp salt
1 cup milk
1 egg
2 tbsp melted butter or oil
1 tsp vanilla extract (optional)
Instructions:
In a mixing bowl, mix together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, egg, melted butter or oil, and vanilla extract (if using). Then, pour the wet ingredients into the dry ingredients and stir until combined. Don’t overmix, or the pancakes will be tough.
Heat a non-stick pan or griddle over medium-high heat. Once hot, use a 1/4-cup measuring cup to scoop the batter onto the pan. Cook until bubbles form on the surface of the pancake and the edges look set, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter, adjusting the heat as necessary to prevent burning. Your pancake is ready! Serve the pancakes warm with butter and maple syrup, or your favorite toppings.
