Waakye is a Ghanaian dish of cooked rice and beans, with red dried Sorghum leaf. It is commonly eaten anytime of the day, depending on preference. Here is a quick recipe for Waakye sauce, usually called Shito. Shito can be prepared in various ways.
RECIPE
Groundnut oil
Onions
Ginger and Garlic (Peeled and cut into small pieces)
Scotch bonnet pepper
Tomato paste
Dried Fish
Chili powder
Salt to taste
HOW TO PREPARE
Wash and soak the dried fish in water, ensure to remove the bones. Heat oil in a pan and add onions while frying on a medium heat. Stir until onions are almost brown, then remove from the heat. Allow it to cool and remove the fish from the water.
Afterwards, blend together the pepper, fried onions, fish along with ginger and garlic. Heat the oil again and add the mixture into it. Add the chili powder and salt to taste. Allow to simmer on a low heat and stir continuously. The color will change as it fries. When it is completely dark, your shito is ready.
