Sukuma Wiki is closely related to Kale and is prepared differently from the traditional preparation of collard greens in the United States. The name Sukuma Wiki means “push through the week” in Swahili. It is usually prepared to last through the week, hence its name. Sukuma Wiki can be paired with Ugali. It can either be prepared vegan style or packed with proteins and natural spices.
INGREDIENTS
- Oil
- Diced Tomatoes
- Collard Greens or Kale
- Salt to taste
- Chopped Onions
- Minced Garlic and ginger (and other spices you like)
- Beef/Chicken/Fish (cut into bite sizes)
- Chili pepper
PROCEDURE
First, wash your collard greens, remove the thick stems and cut into thin slices. Then cook you beef or chicken till soft. Then in a pot, pour in your oil, add the onions, garlic and other spices and sauté for two minutes. Then, add tomatoes and chili pepper and continue frying for another few minutes. Add the beef/chicken/fish and stir until ingredients are combined. Add the collard greens and continue cooking for another 10 minutes until greens are cooked till desired. Serve your Sukuma Wiki with Ugali.
