2 cups barley/millet flour

4-5 cups water

HOW TO PREPARE

In a large bowl, mix the millet flour with 2 cups of water to form a smooth paste. Use your hands to knead the mixture, making sure there are no lumps.

Gradually add the remaining water to the mixture, stirring constantly until it is well combined.

Pour the mixture into a large pot and cook over medium heat, stirring constantly, until it thickens and starts to form a paste-like consistency. This can take around 30 minutes.

Reduce the heat to low and continue cooking for another 30-40 minutes, stirring occasionally, until the bazin is cooked through and has a smooth, creamy texture.

Remove the bazin from the heat and transfer it to a large serving dish.

Serve the bazin with a sauce or stew of your choice, such as a tomato-based sauce, vegetable stew, or meat stew.

Note: The consistency of the bazin can vary depending on personal preference and the type of flour used. You can adjust the amount of water to achieve the desired texture. Additionally, some people like to add a pinch of salt or sugar to the mixture for flavor.
