Vegan Sweet Potato Salad Recipe

Sweet potatoes, peeled and sliced

Cranberries

Green Onions

Vegan Mayonnaise

Salt

Avocado (optional)

Garlic cloves/powder

Extra virgin olive oil

HOW TO PREPARE

Cook your sweet potatoes over medium-high heat, until tender. Drain the sweet potatoes, place them in a large bowl and allow to cool. Chop your green onions and toss with the other ingredients. If you have avocado, remove the seed in the middle and dice into cubes. Mix the potatoes and with the other ingredients until fully coated. Cover and refrigerate for a couple of hours.
