Recipe For Ibirayi (Rwandan Fries)

Ibirayi is a traditional Rwandan dish made from potatoes. It’s a simple and delicious side dish that can be enjoyed with various stews, meats, and vegetables. Potatoes are largely grown in Rwanda, and Ibirayi is similar to the French Fries only slightly traditionally modified.

RECIPE

Peeled Potatoes (Cut into uniform sizes)

Enough water

Vegetable oil

Chopped Onions

Minced Garlic cloves

Ground Tumeric (Optional)

Salt to taste

Fresh Herbs (Optional)

INSTRUCTIONS

Rinse the potatoes well under cold water to remove the dirt. Place in a large pot, with enough water and a pinch of salt. Bring the potatoes to boil over a medium-high heat. Cook potatoes until they are fork-tender or for 10 to 15 minutes. Ensure you do not overcook, hence they become too soft and loose shape.

While the potatoes are cooking, heat the vegetable oil in frying pan over medium heat. Add the chopped onions and sauté. Add the minced garlic and cook for another 2 minutes (This will be the time to add turmeric if you’re using any). Stir to combine.

Once the potatoes are cooked, carefully drain them in a strainer and let them sit for a few minutes to allow excess moisture to evaporate. Transfer the cooked potatoes to the frying pan with the onions and garlic and gently mix together until they are well coated. Deep fry for another 3 to 4 minutes or until crispy, while stirring occasionally.

Season your Ibirayi with salt to taste. If you have any fresh herbs, use for garnish. Your Ibirayi is ready to serve with any choice of meat, stew or vegetables.
