How to Prepare Ghanaian Waakye

Ghanaian Waakye is a version of the country’s combination of rice and beans.

Waakye is a simple and popular dish in Ghana made of rice and beans and served with various accompaniments. This version of Ghana’s rice and beans is cooked with red sorghum leaf sheath known as Waakye leaves. The Waakye leaves gives the dish its burgundy color.  The dish is a Ghanaian popular street food and is also sold on the streets of Nigeria.

INGREDIENTS

Rice

Black eyed Beans (Picked)

Salt

Waakye Leaves

Onions

Water

PROCEDURE

Wash the beans and the Waakye leaves and cook together in a pot (You can use a pressure cooker). When beans is tender, wash the rice and add to the pot. Add more water if needed, add some salt with onions and cook. Once the rice is cooked, remove the Waakye leaves and serve with Waakye sauce and your favorite side.
