Coconut rice is a very easy meal, however cooking times may vary depending on the type of rice and the heat intensity, so keep an eye on the rice as it cooks to ensure it doesn’t overcook or burn. Adjust the amount of salt according to your taste preferences and you will have a very delicious meal.
Ingredients:
1 cup of jasmine rice (or any other long-grain rice)
1 cup of coconut milk
1 cup of water
1 tablespoon of coconut oil (or any other cooking oil)
1/2 teaspoon of salt
Optional: 1/4 cup of shredded coconut (for added texture and flavor)
Instructions:
First, place the rice in a fine-mesh sieve and rinse it under cold water until the water runs clear. This helps remove excess starch and ensures fluffy rice. Then go ahead to prepare the coconut mixture. In a saucepan, combine the coconut milk, water, coconut oil, and salt. If you’re using shredded coconut, add it to the mixture as well. Bring the mixture to a gentle boil over medium heat, stirring occasionally.
Once the coconut mixture is boiling, add the rinsed rice to the saucepan. Stir well to ensure that the rice is evenly coated with the coconut mixture. Reduce the heat to low, cover the saucepan with a tight-fitting lid, and let the rice simmer for about 15-20 minutes, or until all the liquid is absorbed and the rice is cooked. Avoid opening the lid during this time to maintain steam and heat.
As soon as the rice is cooked, remove the saucepan from heat but keep it covered. Let it sit for about 5 minutes. Then, using a fork, fluff the rice gently to separate the grains and release any steam. Coconut rice is now ready to be served. It pairs well with a variety of dishes, such as curries, stir-fries, or grilled meats. Enjoy!
NOTE: If you want it to be a bit spicy, you can add habanero peppers.
