Ikokore or Ifokore is a Nigerian dish made with water yam. Water Yam pottage originates from the Ijebu people of Ogun State, the Western part of Nigeria. It is a staple dish delicacy that improves digestive health and help with constipation. Not only is this dish delicious, it also contains anti-inflammatory properties which helps to reduce the risk of chronic diseases.
To enjoy Ikokore, you can incorporate as much protein as you would like. The most important ingredient is the water yam and of course, what’s a Yoruba dish without pepper.
RECIPE
Water Yam
Palm oil
Blended Pepper mix
Onions
Ground crayfish
Dry fish
Fermented locust beans (Ogiri Ijebu)
Seasoning cubes
Salt to taste
HOW TO PREPARE
Slice your water yam into small slices, peel, wash and then grate with the smallest side of your grater. Add seasoning, salt and crayfish to the grated yam and mix thoroughly. Then set aside. Place your pot on a medium heat, when it’s dry/hot add the palm oil, then sliced onions, after wards add the locust beans and sauté for a minute or two.
Add the blended pepper mix, then seasoning (Remember you have seasoning in the grated yam), and salt to taste. Add water and leave to fry till oil floats, keep stirring to avoid burning. Now add your protein and cook for a few minutes. Remove all and leave just the stew in the pot.
Turn down the heat and portion the grated yam in small and large lumps. Allow it to boil for 10 minutes on low heat, then stir. Return the protein into the pot and combine gently. Leave to simmer for 2 minutes and serve hot.
