When you think of fish roll, you would probably think you should be frying it, but what if you learnt how to bake it instead? Fish roll is typically made out of flour and filled with fish. This recipe is sure to give you a super crispy, tasty and yummy fish roll.
RECIPE
400 grams of flour
100 grams of butter
1 teaspoon of baking powder
I large egg
I cup of cold water
Deboned mackerel fish
Scotch bonnet pepper (coarsely blended)
Diced onions
Garlic clove (or garlic powder)
Curry and thyme
Seasoning and salt to taste
Vegetable oil
HOW TO PREPARE
First make your filling. To do that, you must have boiled your fish with seasoning before deboning and mash with a fork. In a pan, pour a little vegetable oil, add onions with garlic and fry until golden brown. Add the mashed fish, pepper (as much as you like), seasoning and salt, curry and thyme and stir fry for a few minutes until well combined. Transfer to a bowl and set aside.
Sieve your flour into a clean bowl, then mix all dry ingredients together. Add butter and mix till crumbly in texture (using the tip of your fingers). Gradually add cold water until dough is formed (do not pour all the water at once). Dust your counter with flour and knead the dough, cover and let it rest for a few minutes.
Afterwards, take out your dough, dust the counter with a little flour, divide the dough and roll each out flat. Cut into rectangle add fish fillings an inch away from the edge and roll. Cut the roll into your desired sizes and place into a greased pan. Use a toothpick or fork to make a hole. Then, break your egg into a bowl, take a brush and use it to egg wash. Bake until golden brown.
