Maafe is a traditional West African Peanut soup that comes in variations. There are various ways of preparing Maafe, but each contains roasted peanuts that is ground into flour for the sauce. Maafe commonly includes chicken/beef/lamb, tomato paste, onion, and various spices and vegetables.
Traditionally, Maafe is a richly flavored soup served with white rice, or Tuwo (millet dough). You can completely modify or cook Maafe to suit your taste.
RECIPE
Chicken or Beef or Lamb (basically any meat of your choice)
Finely ground roasted peanut or peanut butter
Olive oil
Pepper
Tomato paste
Spices (ginger, garlic, parsley and so on)
Chopped Onions
Chopped Carrots
Potatoes
Cayenne Pepper
Salt to taste
HOW TO PREPARE MAAFE
Blend pepper with onions, ginger and garlic and set aside. In a large pot, season your chicken/beef/lamb, add onions and boil till tender. Keep the stock aside (water from the meat). Then, heat your oil over medium heat, sauté the beef/chicken/lamb, remove and set aside.
Afterwards, add your pepper mixture, and sauté for another few minutes. Stir continuously. Then add potatoes, carrots, peanut butter, tomato paste and stock. Continue cooking until potatoes are tender. Add the meat, and check the thickness. If you are satisfied with the thickness, your soup is ready to be served.
