How to Make Malaysian Curry Puff (Karipap)

Karipap or Malaysian curry puffs is a pastry that is flakey and crispy on the outside, with sweet potato filling on the inside.

RECIPE FOR KARIPAP

Potatoes

Vegetable Oil

Onions

Curry and thyme

Water (normal and cold)

Salt

Cilantro

All-purpose flour

Margarine

PREPARATION

FOR FILLING

Boil potatoes, allow to cool, peel and cut into small cubes. Heat vegetable oil in a fry pan, sauté onions for a few seconds, add curry and thyme and stir together. Add cubed potatoes, stir together and pour in water. Add salt, chopped cilantro and continue to stir. Turn your filling into a bowl and allow it cool.

FOR THE CRUST

Mix flour, salt and margarine in a bowl. Afterwards, add water gradually and knead into a soft smooth dough. Make sure you do not add too much water, so your dough doesn’t get too sticky. When smooth, cover in plastic wrap or towel and allow it to rest.

TO FORM KARIPAP

Remove the dough after 10 to 15 minutes and roll out on a floured surface. Cut out circles, place a spoonful of filling into the center. Fold the dough over it, and seal by pressing the edges together. Deep fry your karipap over medium heat until golden brown.

NOTE: You may add chicken into your feeling if you want.
