INGREDIENTS:
- 1 cup of egusi(melon) seeds
- 1/2 large onion
- 10 medium size shrimp
- 1/8 cup palm oil
- 1/8 cup groundnut oil
- 1/2 fresh red pepper
- 300 g chopped steamed spinach
- 1-1/4 cup of beef broth
- Cooked assorted beef
- spices

DIRECTIONS:
- Chop seeds in blender. Cut onion in pieces adding to blender as you cut. Add the raw shrimp to blender. Blend until smooth. You will likely need a little liquid to help it blend.
- Heat oil in a large pot.
- Finely chop other half of onion adding to oil as you chop. Stir until soft and translucent.
- Chop the fresh red pepper and add to pot to fry a bit.
- Add the blended egusi and beef broth.
- Add the spinach and spice. Allow to simmer by covering it for 10 minutes.
- Stir occasionally and add the assorted beef to the egusi broth.
- Reduce heat to medium, and cook for 5 minutes, stirring constantly until the mixture is very thick.
- Serve egusi soup (or stew) on top of Fufu, pounded yam, eba, semolina, e.t.c
