AFRICAN FOOD: HOW TO PREPARE ETHIOPIAN KITFO

Kitfo is one of the typical traditional dishes of Ethiopian cooking which originated among the Gurage people of central Ethiopia.

Beef Tartare/Kitfo [Saveur]

Also called beef steak tartare, Kitfo is a richly flavored dish made with minced raw beef, the Ethiopian blend known as mitmita, and an herb infused clarified butter known as niter kibbeh.

Kitfo is a simple dish to prepare and only takes about 40 minutes. It can be served either raw or slightly cooked. Kitfo has a slightly crispy and raw taste, and is incredibly filling, thanks to the raw beef and other side dishes it is served with. It can be prepared by people who have experience with raw meat, and can be sure that the meat is safe to eat.

First, you cut your beef into smaller pieces. Place some of the cut meat into a food processor, spread some mitmita, grind until meat is finely chopped and repeat the process as required (if you do not have a food processor, you can use minced beef). In a pot, melt some butter, add mitmita and other spices (like garlic, salt, to taste). Remove from heat and combine the spicy melted butter with spiced minced meat, mix until thoroughly marinated. Your kitfo is ready to serve. You can serve with your injera (a sour fermented flatbread), gomen or collard greens, along with the soft Ethiopian cheese.
